Borlotti Beans from Saluggia / 500g. / Principato di Lucedio
Beans from Saluggia are a selection of the Borlotto variety grown in Vercelli province, Italy. They are red with a pinkish tone and slightly mottled, with an oblong, kidney appearance. Promoted by the Consortium for the Protection of the Saluggia Bean, they are also part of the Slow Food Ark of taste.
Leave to soak for 12 hours, cook in salted water for 1 hour after bringing to the boil, and drain. With their intense flavour and floury consistency, they are ideal for traditional soups, tasty salads, and as an accompaniment to main courses.
