Black Lampong Pepper / Sumatra, Indonesia / 70g. / Terre Exotique
Lampong black pepper is perfect for those who appreciate spicy and powerful peppers with its Woody vegetable notes. Use it to spice up a risotto, a fricassé of vegetables and mushrooms, grilled meat or fish. Simply crush lightly with a pestle and mortar to preserve its rich aroma.
Lampong black pepper is grown in the extreme south of Sumatra in Indonesia. It is picked and sorted by hand in the province of Lampong, between the Java sea on one side and the Indian ocean on the other.
The first Lampong pepper plants are said to have been introduced over ten centuries ago by Indian traders.
In Lampong province, mainly black pepper is produced, the manufacturing process being simpler than that of white pepper which requires a lot of water and suitable infrastructure such as soaking tubs. In this province of southern Sumatra, all stages of production (picking, drying, sorting, etc.) are entirely manual. Once picked, the fresh green pepper is dried in the sun on mats in front of the wooden houses. Under the effect of the sun, the water in fresh green peppercorns evaporates. The grains are depigmented and wrinkles appear, resulting in the first black peppercorns.
