Cannellini beans are white legumes with an almost cylindrical shape. They are greatly appreciated as meat substitutes thanks to their high nutritional value, owing to the presence of proteins, mineral salts and vitamins. Like all legumes, they are gluten-free.
Leave to soak for 12 hours, changing the water at least once. Cook in plenty of salted water for 45 minutes after bringing to the boil, and drain. Ideal for tasty first courses, soups, pureed soups, white bean hummus, but also as a side dish for main courses.
